Crocktober Mini Series: Chicken Curry

Hello, lovelies!

I hope everyone is having a great Fall so far, and you are having your fill of PSL, Ugg boots, and decor.

It has always been a close call between whether Autumn or Winter is my favorite season. Then I think about October, a time when it is socially acceptable to dawn on costumes in public, and I have to give it to Fall. Plus, there’s Crocktober.


This is where I sound like I care a little too much about food (truth is I do), but last Christmas I was gifted a crockpot. Since then my life has been full of dinners that are ready as soon as I get home!

Since Cody and I are on opposite schedules, I use my crockpot several times a week to prepare our meals. I love how we both can eat the same meal, without even seeing each other.

Thus, I thought it being my favorite month of the year, I would share some of my favorite crockpot recipes!

This first one I found from Pinterest, and it is a favorite of mine.

Chicken, salsa, an onion, cream cheese, and curry powder sounded like an odd combination at first, but it is so scrumptious I fix it at least twice a month now! I usually pair it with basmati rice and garlic naan.
